Happy Australia Day!

Happy Australia Day to all of my Aussie friends in Australia and abroad!

To celebrate Australia Day, I wanted to share some of my favourite snack foods from Australia:

1. Vegemite

Synonymous with Australia, most people would recognise Vegemite as one of our most iconic foods. Made primarily from yeast extract, it’s a thick, dark spread that people usually put on their toast, crumpets and crackers. Due to its strong unique flavour, people either hate it or love it but I personally love it and there’s always a small jar in my pantry! The trick to enjoying Vegemite is moderation and I think it’s best served on freshly buttered toast, mmm!

2. Cheezels

Cheezels are a fun trip down memory lane as  I remember my mum packing small packets of Cheezels in my lunchbox for school. These are corn-based, cheese-flavoured rings of goodness! The best way to eat them is to put one on each finger and thumb, and pluck them off with your mouth!

3. Shapes

In addition to Cheezels, I also remember eating lots of Shapes as a kid! Shapes are savoury, almost puzzle like shaped biscuits that come in a wide range of flavours such as barbecue, pizza, cheese and bacon, and roast chicken. Each biscuit is packed full of flavour and I love the crunch as I chomp into them! In recent years, a new ‘light and crispy range’ was released making the biscuits even thinner and crunchier! Nowadays, my favourite flavour is sweet chilli and sour cream shapes from the light and crispy range!

4. Tim Tam’s

After Vegemite, I would say that Tim Tam’s are another one of our most iconic foods. Tim Tam’s are smooth, cream-filled biscuits coated in chocolate. They are so delicious and although I don’t have much of a sweet tooth, I’ll never turn one of these bad boys down! They come in a wide range of flavours such as original milk chocolate, dark chocolate, white chocolate and my favourite, chewy caramel. They also release limited edition flavours from time to time, and I’m dying to try the coconut cream!

So there you go! These are just a few unique snack foods from Australia that I’m enjoying today!

Short Guide to Chinese New Year

This weekend marks the start of a new Chinese lunar calendar. As we bring in the Year of the Rooster, I wanted to share what Chinese New Year is all about and how my family and I will be celebrating this year.

When is Chinese New Year?

Chinese New Year corresponds to the Chinese lunar calendar, so the date will vary each year. The festivities last for 15 days, from the new moon to the full moon. This year, Chinese New Year starts on Saturday 28 January. The most important dates are Chinese New Year’s Eve where families typically get together to celebrate and Chinese New Year’s Day, where families will begin visiting close family and friends.

How to Prepare for Chinese New Year

Before Chinese New Year, people usually clean their houses from top to bottom, to get rid of all the bad luck from the previous year. If any sweeping is done during the first few days after the New Year, it’s said that this will sweep away all the new luck, so be sure to get all of your spring cleaning done beforehand! Other preparations include decorating the house with messages and symbols of New Year cheer and good luck, and preparing food for the festivities.

What to Wear 

During Chinese New Year, people will typically wear bright red clothes as it’s believed that the colour wards off bad fortune and evil spirits. Some people may also purchase and wear new clothes to symbolise a new beginning for the New Year. For men, this typically means a red shirt and for women, this typically means a red dress. My husband and I prefer not to buy new clothes every year, so we have red clothes on hand for special occasions such as Chinese New Year.

What to Say

There are various greetings and sayings that you may hear during Chinese New Year. However, the most common one is wishing someone “happiness and prosperity” or “gōngxǐ fācái”. For close family and friends, you can be a bit more cheeky and ask for a red envelope filled with money, by saying “gōngxǐ fācái, hóngbāo ná lái!”.

What are Chinese Red Envelopes?

Also known as red packets, or “hóngbāo’s” these are typically given to kids or unmarried adults from their parents, grandparents, family members and close family friends. The red packets symbolise happiness, good luck and blessings, and inside each packet you’ll find money. Traditionally, people should only receive red packets while their unmarried. So when they do get married, it’s time to give rather than receive! Parents will typically keep on giving red packets to their married children however, as a symbol of their love and blessings.

What to Look Forward Too

There are so many things to look forward to during Chinese New Year but my top 3 would be:

  1. Catching up with family. Here in Australia, my family isn’t too traditional so all of us including my extended family will catch up on the weekend closest to Chinese New Year’s Day over a delicious feast.
  2. Indulging in Chinese New Year treats. There are special foods and treats that are made especially for the Chinese New Year festivities. Every year, I look forward to having pineapple tarts and bak kwa, which are salty-sweet dried squares of pork, similar to jerky.  I also love the “Prosperity Salad” or “Lo-Hei Yusheng”, which is a delicious raw fish salad that is tossed with chopsticks by everyone at the start of the family catchup feast. The higher, the better!
  3. Giving red packets. Although I have to admit receiving is a lot more fun than giving red packets, it’s a privilege to give red packets to younger family members as a married couple. They say the more you give, the more you’ll receive happiness and prosperity in return, so it’s important to be generous!

Happy New Year!

Happy New Year! I hope you all had a wonderful Christmas and New Years celebrations with family and friends. My Christmas was spent with family – catching up, laughing and eating way too much! In contrast, New Years Eve was a relatively quiet affair and my husband and I had a low-key albeit fun night in.

The past year flew by so quickly but I’m glad to be welcoming in 2017. There’s something so magical about the start of the year that seems to give people renewed energy, optimism and opportunities to start afresh, form goals and try new things. I’m not sure what 2017 will bring yet but I look forward to the adventure!

Bacon Chutney

In itself, chutney is a deliciously sweet and tangy condiment that satisfies the taste buds but bacon chutney is on a whole new level! Sadly, I only discovered the joys of bacon chutney a few months ago at a local cafe called Sprolo and I knew that I’d have to try and recreate this at home. I found a recipe online and adapted it with the ingredients I had on hand. The result was sweet, salty, tangy goodness and needless to say it didn’t last very long in the house!

With Mother’s Day coming up this Sunday, I thought this would make a fantastic edible gift, so I’ve doubled the quantities of the original recipe to make an extra large batch for the 2 special ladies in our lives. I’m sure they’ll love it as much as we do and I hope you do too!

Bacon Chutney Recipe

Fills 2 large jars | Prep Time: 20 mins | Cooking Time: 1 hour

Ingredients 

  • Big glug of olive oil
  • Canola oil cooking spray
  • 4 leeks, roughly chopped
  • 4 onions, roughly diced
  • 2 bulbs of garlic, roughly diced
  • 10 strips of bacon
  • 2/3 cup honey
  • 1 can diced tomatoes
  • 1/3 cup tomato paste
  • 1/2 tablespoon paprika
  • 1/2 tablespoon oregano
  • 1/2 tablespoon Tabasco Chipotle Pepper Sauce
  • 2 teaspoons balsamic vinegar
  • Salt and pepper to taste

Method

Heat the oil in a large saucepan and saute the leeks, onions and garlic until the vegetables become soft. Add the honey and stir well to dissolve. Add the diced tomatoes, tomato paste, paprika, oregano and chipotle pepper sauce. Stir well to combine everything together. Bring the heat down and let the chutney simmer with the lid on for about 1 hour.

While the chutney is simmering, preheat the oven to 180 degrees and lay out the strips of bacon on lightly sprayed baking paper. Bake the strips of bacon in the oven for around 15-20 minutes or until crispy. Remove from the oven and set aside on paper towels to cool. Once cooled, dice into small pieces.

Once the chutney has finished simmering, add the balsamic vinegar, salt and pepper. Taste and adjust any seasoning. Gently stir in the diced bacon. Enjoy some warm chutney on toasted bread and pop the rest in an airtight container in the fridge to enjoy for later.

Monthly Recap

This month I’ve been buried under work and study, so I’m really looking forward to a break early May before it all starts back up again. With uni in full swing I’ve been struggling to re-find my balance and despite my earlier advice, I’ve been spending more time working and studying than anything else. Nevertheless, I forced myself to get out and take a walk every now and then, which was a nice change away from my desk!

I didn’t go out much this month but I did go to a friend’s farewell lunch where we had a fantastic 2 course lunch special at The Painted Bird. It was such good value at only $30! The entree was a tasting plate, which consisted of a delicious duck tea (similar to bone broth), cracker with cottage cheese, smoked salmon and pork croquette. I chose the crispy skinned salmon as my main and it was cooked to perfection! The restaurant is great for something a little bit more special and has fantastic service, so I’ll definitely be back!

Unfortunately not many books read or much knitting done this month because I haven’t had much down time, so I’m hoping to make up for it next month.

Tomorrow, my husband has a day off so we’ve planned a Mega Date! We’re going to The Atrium for a leisurely lunch buffet, followed by a movie. With the month we’ve had I’m really looking forward to having some downtime with my one and only!

Anzac Day Biscuits

As an Australian immigrant, Anzac Day doesn’t have the same meaning for me compared to others who have had or continue to have family members in the Armed Forces but it’s a day that I’m respectful of and reflect how fortunate I am in being able to live in such an amazing country.

I’ve attended quite a few dawn services in the past and it’s something I definitely recommend doing if you haven’t done so yet. Nowadays though, I like to spend the day with family, food and of course, baking Anzac Day biscuits! This year my wonderful husband helped me out and it was amazing having the smell of baked oatmeal goodness wafting throughout the house. Not bad for a first timer!

My husband asked me if I knew about the origins of the humble Anzac Day biscuit and I was surprised that I hadn’t really wondered about it before! Turns out they were a bread substitute for soldiers used with ingredients that were easily available and wouldn’t spoil, so no sugar or eggs. They were originally savoury, extremely hard and often ground up to eat like porridge. Today, there are so many different versions of this recipe and our biscuits were inspired by Maggie Beer’s recipe. They were absolutely delicious and well worth the effort if you have the time!

Yanchep Lagoon

One of my goals this year is to get out of the house and see more of this beautiful state.

Here in Perth we are lucky to have so many beautiful beaches and on a perfect sunny day my husband and I made an impromptu trip up to Yanchep Lagoon.

It was approximately an hour’s drive up to Yanchep and it went by quickly. It was interesting to see the scenery change from dense housing and busy roads to lush greenery and new housing developments. At one point we had to slow our car down for a pair of crossing emus!

When we arrived, it was quite windy and the current was strong so we didn’t venture too far out. We spent a bit of time exploring on the reef and lying in the shallow water letting the waves wash over us. Later, we spent the rest of our time at the beach so we could have a bit of a swim.

It’s been years since I’ve been swimming at the beach so it was nice to do something different for a change. Minus the sand, I’d forgotten how much fun it was! The sun and sea salt did me good and an added bonus was that the beach wasn’t crowded at all.

Yanchep Lagoon is a mini beach paradise and we will definitely be back with our reef shoes so we can venture further out and explore more!

Monthly Recap

February was a fun and action packed month!

Earlier during the month we celebrated Chinese New Year and welcomed the Year of the Monkey. I was born in the Year of the Ox and according to Chinese Zodiac predictions, this year should be a good one for me.

My husband and I watched some great movies including Goosebumps, The Revenant and Deadpool. A must watch for all 3. We also won some free tickets to see Zoolander 2. It’s not something I would pay to watch (more of a home movie night for me) but still lots of laughs and beyond ridiculousness that fans of the original movie will love.

I got some Vitamin D and got into my bikini for the first time in years! I hit the pool and drove up north to Yanchep Lagoon. The sun and sea salt did me some good.

Fringe World Festival was in town and we went to our first interactive show! We went to Get Lost Maze and I think I was the last person to figure out how to leave the maze (yes, my dear husband let me wander around aimlessly until I begged him to get us out of there!).

I’ve been knitting up a storm and am seriously obsessed with my new found hobby. I’ve almost finished my first scarf and have already bought more balls of yarn to get started on 2 more projects.

To round up February, we’ll be heading to Melbourne for a few short days and I’m looking forward to lots of good food and some shopping!

Perth Fringe World Festival

It’s that time of the year when giant pink bunnies roam the streets and Perth turns into a crazy kaleidoscope of festivities. The first Fringe World Festival came to Perth a few years ago and it’s always brought with it an air of fun and frivolity.

The main hub of activity is centred in Northbridge and comes to life in the evenings. The tell tale sign of events, shows and restaurants participating in the festival is evidenced by the bright pink bunting flags that are strewn up everywhere. They help add to the carnival like atmosphere and add pops of colour to the streets.

This year we wandered around The Pleasure Garden in Russell Square Park where there were pop up bars, food trucks, side shows and other events being held. As the sun began to set, it was beautifully lit and fun to explore.

We weren’t actually that hungry but we couldn’t resist the smell of the food and were drawn to large grills of barbecued goodness. There were big slabs of steak, grilled veggies, chicken and pasta. I was torn about what to get but my husband and I ended up going with the steak and spaghetti meatballs.

The steak was cooked to a perfect medium rare and was soft to chew, although a bit more seasoning would have helped. I had 3 giant, delicious meatballs to dig into and the pasta with garlic was absolutely divine!

With our stomachs full of delicious food, we wandered around the gardens to see if any shows piqued our interest. We ended up going to Get Lost Maze, which is a mini maze with interactive characters inside. It was kooky, weird and a lot of fun!

If you haven’t been to any Fringe events yet, I highly recommend it! There are so many different events and shows that there’s bound to be something for everyone. It ends this week so be quick!
